Click on the BIU icon to expose the formatting options. Also, SHIFT+CMD+M is a direct shortcut for highlights

By BIU Icon do you mean the one that is on the upper right of the keyboard ?
If yes, what should I do after ?
On wich touch of the keyboard do I have to tap ?

With the caret on the highlighted area, tap the BIU keyboard and then the highlighter button.
