Hi there everyone,
I just wanted to share a workaround for the ISO date formatting:
If you go to the iOS settings → Language & Region → Date Format
you can choose the YYYY-MM-DD format to be used system wide in iOS.
It also then shows up in your date/time button menu in Bear.
That being said, it only works for inserting the date but not the date+time
so I hope that the Bear team will provide an ISO date format option in the app natively.
