What if we want to keep the Bear 1 in place? Bear 2 is called the same (“Bear.app”) so macOS will prompt us to overwrite the current one. Should we choose the “keep both copies” option when prompted?

Yes, the Bear 2.0 will be renamed as Bear copy. Or you can rename the app whatever you like.
